Here's our recipe that we always use:
(Also called SOS - sh-- on the shingle)
Most recipes don't call for peas
Chipped Beef on Toast
2 tablespoons butter
approximately ¼ to 1/3 cup of shallots minced small.
2 tablespoons all-purpose flour
1-1/2 cups warm milk (John likes milk better than evaporated milk)
1 8-ounce jar dried beef
1 pinch cayenne pepper
About a cup of frozen peas
In a medium saucepan over low heat, melt butter; and fry shallots. Whisk in
flour all at once to form a roux.
Whisk in milk a little at a time.
Increase heat to medium-high and cook, stirring, until thickened.
Bring to boil, stir in beef, cayenne, then peas.
Heat through and serve over toast.
