They are very big in our Texas border area, The Lower Rio Grande Valley
(between Brownsville and Roma - along the river). The grocery stores
carry them in pre-seasoned and plain. I rub them with my usual rib-rub,
leaving them in the fridge for a few hours, wrapped in foil.
