Hi,
I have here the recipe we (my family) have to prepare hot cakes as we call
them in Mexico. It comes from my Granny
1 1/4 cup of sifted flour.
2 1/2 tea spoons of baking powder (Royal)
3 table spoons of sugar.
3/4 tea spoon of salt.
vanilla essence few drops.
1 egg
1 cup of milk
3 table spoons of melted butter.
Sift together all dried ingredients, the flour again with them.
In a bowl scramble egg, milk and few drops of vanilla essence.
Add to the dried ingredients and stir until you get a soft mix.
Add the melted butter which has to be not warm and stir again.
That's it.
What I have heard about street vendors pancakes is that the substitute part
of the milk by water but I really haven't tried this.
