Obviously too late to suggest this now, but my wife once made an
interesting dessert out of her head. She made several large almond
meringues and was thinking of something to use as a filling. Having used
all those egg whites, she had all the yolks leftover, so she made a
chocolate pot de creme to use as the filling. It was excellent.
