Trimmed fat and sinew, sliced each longitudinally into cutlets,
seasoned with black pepper, salt, and Penzy's adobo, fried to
perfection in olive oil.

The pork roasts were frozen.

Six cats can put a good dent in chicken. The left overs will be used
in other dishes.

That's very cheap for the chicken breasts...Our Boneless Chicken
> breasts sell for between $8.99 - $10.99 a Kilo here in Sydney, Oz....

About $5/lb for chicken in any form is expensive.

A little better... almost pays for you to have chickens FedExed...
6-7/lb roasters are often only 79cents/lb here.

Tonight is the lowest temperature of this winter so far, down to 19F
and falling... perfect weather for chicken soup... and we had a really
nice New Year snow last night:

HAPPY NEW YEAR ALL!

Sounds nice and simple a way to do the Chicken Breasts.. and tasty...

I often prefer the Thigh Fillets as they are always more moist..With Chicken
Breasts, it's so easy to overcook them...After all the years I have been
cooking since my wife died, I have finally mastered cooking them and still
be moist... I often put a pocket in the breasts and put some Brie or similar
soft cheese and Garlic or some other stuffing..

As to the prices of Fresh Chicken here, there are so many type available,
like Corn Fed, Free-Range, caged, etc... The same with legs, wings, fillets
as well...The prices varies considerably...

Red meats have always been common eating here in Oz, including Pork, Lamb
etc...But because of the drought the price of Beef and Lamb have increased
so much thst Poutry has become a main-stay of the average Aussie family....
I love my Chicken and Ducks, but still prefer (in order) Lamb, Beef,
Pork....So I eat a lot of Beef Steak myself and family

I see from your pictures that you have had plenty of snow for Christmas....
and yet we had temperatures up near the mid 40's oC here in many parts, but
Sydney for once was in the lower 20's oC for a change..Have those pics been
taken at your own property?....

I see a beautiful Cat there, Sheldon...I have always had Siamese Seal Points
for most of my life, but the Son and younger Daughter brought home another
breed 3 weeks befor my last Siamese died at 15!.... She is a 'Continental'
Breed...which have there origins in the same line as Siamese cats...She is
'Cinnamon' both in name and Breed of Continental.....

She would now be approx 16 weeks old now...She has definately been the most
active and loving natured cat I have ever had....I wish I could post a
Picture of her, but have no place to put photo's...

A Happy New Year also to you and your 6 cats, Sheldon and all the other
cyber-folk that post on RFC.
