My buffalo supply also comes from Canada. Offhand I forget what I pay,
since free-range (not grain fed), no antibiotic/no hormone buffalo is at
any price, healthier and tastier than grain feed cows packed by the
thousands into corrals laying in their own manure! Same with pig. Grow 'em
fast with hormones, screw their living conditions. Kill 'em, and ship 'em
out.

Buffalo is also so lean it's one of the lowest sat fat protein you can eat.
And you can cook it bloody rare without fear of ecoli, etc. I don't know
why or how but I've had bloody rare buffalo filet mignon hundreds of times
and no ill effect, not once.
