To me, 1-1/2 teasp for 4 cups isn't necessarily a slow rise; it is a
standard for pizza dough in a bread machine rise, and if anyone has done
dough in a bread machine, it pumps-up fast.
However, I do like to rise in the refrigerator overnight for a slow rise.
