its appranetly fairly standard for professionals, and reportedly used
for really BIG roasts, in the aforementioned hotel ovens, etc.
anyway, no need for me to try it, since the bake-the-living-jesus-out-
of-it for 6 minutes a pound and then turn off oven worked a treat.
