There are all sorts of vegetarian cookbooks and online recipes/forums for
vegetarians. One of my favorite and quick to fix vegetarian recipes is
bean/corn chili.
Simply heat together three cans of beans (different kinds, drained or not,
depending on how thick you want it), a can of corn and a large jar of salsa.
I usually doctor this up a bit with a spoonful or two of cocoa powder, some
fresh cilantro, chopped onion and maybe some extra tomatoes if I have any
around. Serve as is or over rice if you wish. Top with shredded cheese,
sour cream, avocado or guacamole, black olives, chopped tomato, chopped
onion, cilantro and some corn chips.
Another quick to fix meal is pasta of your choice, cooked al dente and
heated in a pan with some kidney beans, chopped tomatoes and finished with
freshly ground black pepper and grated parmesan. Yum!
Tonight I am having vegan nachos. I started with some chips I got at the
health food store. They have salba (chia) seeds in them for added fiber and
protein. Make a nice bed of the chips, then top them with little blobs of
"refried" beans. I am using some canned ones but you can easily make them
yourself by cooking some pinto beans with a bit of onion and cumin, then
mashing with a potato masher to the desired texture and adding a bit of
olive oil. Top the beans with some vegan rice cheese torn into bits. You
can use real cheese if you're not allergic or not a vegan.

Then put in
the microwave until the cheese melts. Garnish with black olives, Pico De
Gallo and sliced green onion or whatever else you like on your nachos.
Being a vegetarian is very easy. I was one for many years. I found I
could usually eat what the family was eating by leaving out a few things and
adding some nuts, peanut butter, cheese or eggs for protein. My family
almost always had a salad and two kinds of vegetables for dinner. I simply
didn't eat the meat and added the protein of my choice. I love beans too
and we always kept cans of beans onhand. Kidney beans on a salad are great!
Trail mix was another thing I was never without. I made my own with nuts
and seeds, dried fruit, coconut and sometimes even some chocolate chips. I
kept a bag of it in my purse so I would always have a quick meal if I was
out somewhere and couldn't find something suitable to eat.
Some people think all a vegetarian has to do is not eat meat. Not true
because we all need good nutrition. I know people who call themselves
vegetarians but they live on French fries, chips and candy. With a little
planning, it doesn't have to be that way.
