My niece is trying a vegetarian diet, and she loves my lentil soup. It
supplies
complete proteins when served with a sprinkle of cheese and some rice. (She
eats eggs and dairy).
1 bag brown or "rainbow" lentils. (They do not require soaking.)
about ten cups water
1 cup favorite salsa or canned, diced tomatoes, with or
without heat (spicy heat, in other words)
1 large onion chunked and browned until nice and dark ,
but still plump and firm.
Salt and fresh ground pepper to taste.
1 cup shredded cheddar to use as a condiment,
bowl per bowl.
Put the lentils in a large pot and fill the pot with cold
water. Put your hands in there and sort through them to
remove any debris or funky looking lentils.
Pour off this wash water and fill pot with about ten cups of
fresh water--enough to have about three inches covering the lentils.
Bring to a boil, then reduce to a gentle simmer for 20 minutes.
While they simmer, brown your onions.
After the lentils have plumped up, stir in the salsa, add the onions,
and salt and pepper to taste, simmer five additional minutes.
Serve with a little bow,l of shredded cheddar or other cheese,
so people can put on as much as they like. It's very good with
buttered rice on the side, too.
