Apricot Ham
INGREDIENTS:
For the glaze:
1 cup apricot jam or brandy-soaked, dried apricots
1/3 cup Dijon mustard
1/2 cup orange juice (Minute Maid works fine but
fresh will give you some zest, too.)
2 Tbs. EVOO
2 tsp. Orange Zest if using dried apricots instead of jam
1 sm onion, chopped fine
4 cloves garlic, crushed
Kosher Salt and fresh-ground pepper
Optional:
1 habanero chile, seeded and chopped fine
1 Serrano chile, seeded and chopped fine
1 7-9 lb ham
METHOD:
Preheat oven as directed on ham's package; usually 18 minutes
per pound.
Combine all ingredients in a small saucepan, bringing to a
simmer.
Set ham into baking dish and score the top of the ham in a
diamond pattern; ladle glaze over ham, spreading to coat
completely.
Check periodically and adjust heat to prevent burning the
glaze.
For those that like a little heat, add the chiles.
