Chicken leg experiment
I preheated the oven to 400 F, put just a thin coating of olive oil in a
ceramic baking dish, them mixed up:
3/4 cup flour
1 tablespoon rosemary
1 tablespoon thyme
2 tablespoons paprika
1 teaspoon cayenne
a goodly amount of salt.
Washed six chicken legs and coated them well, even pulling back the skin and
packing the flour mix underneath. In the end they were thickly coated and
dry on the outside.
I placed these legs in the hot baking dish for 15 minutes on 400F then
flipped them with a stainless spatula. they were crispy on the downside, and
smelled wonderful.
I reduced the temp to 375 and baked them for another 25 minutes.
They turned out really nice, the coating crispy in places and chewy in
others, KFC style but not as salty. The cayenne was a really nice addition.
We ate them with fresh cole slaw and skillet-fried potatoes with onions.
