Dinner was good, but the leftovers...
....were fantastic!
We had roast chicken for Easter dinner. Dear Husband was
evidently ravenous because he ate both legs, one thigh, and
half of the breast he had carved. I ate the other half.
Tonight for dinner I sauteed in a little butter:
~ 10 spears of leftover asparagus, cut into 1 inch pieces
a few thin slices of onion
about a half of a sweet red pepper, cut into matchsticks
a jar of pickled artichoke hearts, drained and chopped
a handful of black olives
sprinkle of salt and fresh ground pepper
I set those aside as I shredded the remaining chicken breast
and thigh, then boiled some linguini.
I heated the leftover gravy in the saute pan, added the
chicken, and when it was warm, the rest of the ingredients
plus about 1/4 cup of half and half (cream) for volume.
I drained the pasta and put it in a serving dish, poured the
chicken mixture over it and sprinkled with some freshly
grated Parmigiano Romano.
It was one of the tastiest leftover meals I've ever made.
