Have you tried Andrea Nguyen's blog? The recipe one

has recipes for banh beo man and banh beo ngot. The recipes are also
in her cookbook (beautiful cookbook, by the way), and in the book is
also a recipe for Banh Cuon (including making the wrapper from
scratch).
