I'm all for keeping things simple. I loaned my crock pot out, never
got it back, and just LOVE having one less thing to store. I just
slow cook in a regular pot, while I am at home.

Your method sounds great. Yes, I know, this is not what you asked
about. Life is like that sometimes.

I am interested in some of these steamed dishes you make.
