Default Best Spud Puppy Casserole yet!

Now before someone gets on my case for using potatoes, let me just say that
you don't have to use them at all. Or if you are making this for the
family, you can easily just eat the bottom of it and not the potatoes. Spud
Puppies are little nuggets of hash browned potatoes. They are organic and
without any additives. If you don't have food allergies, you could
substitute Tater Tots or similar or even a package of frozen hash browned
potatoes on the top.

Start with a pound of lean ground beef. Brown it, put it in a 2 quart
casserole, then make the sauce.

For the sauce, take one large white onion, one zucchini, three stalks of
celery, one red bell pepper, and about four handfuls of cremini mushrooms
and chop them fine. I used the food processor. Put the chopped vegetables
in a large skillet with a bit of olive oil to prevent sticking and cook
until soft.

Mix can of green beans (you could use frozen) in with the meat. Add the
sauce and then drizzle with enough One Carb Ketchup just to cover the top.
Add a bit of Herbamare for seasoning, then stir through.

Top with the potatoes (if using), and bake at 425 until heated through, and
if using potatoes, until they are browned.

If not using the potatoes, I would cover this dish to prevent it from drying
out. It came out tasting like a really good meatlaof, but was much quicker
and easier to fix. And my family is eating vegetables that they wouldn't
eat if they knew they were in there.
