Title: Family Style Swiss Steak
Categories: Beef
Yield: 4 Servings

3 tb All-purpose flour
1 lg Oven bag
1 cn (14-1/2 ounce) diced
-tomatoes with green pepper
-and onion
1 cn (10-1/2 ounce) condensed
-beef broth; undiluted
1 md Onion; sliced
1/2 ts Salt
1 ts Pepper
1 Bay leaf
4 Cube steaks
8 md Carrots; cut into 1/2-inch
-slices
Hot cooked rice

Place flour in oven bag; twist end, and shake to coat. Place bag in a
13- x 9-inch pan. Add tomatoes and next 5 ingredients; squeeze bag to
blend ingredients. Place cube steaks in bag in a single layer over
tomato mixture; place carrot slices around steak. Close bag with
nylon tie, and cut 6 (1/2-inch) slits in top of bag.

Bake at 350° for 1 hour and 15 to 30 minutes or until steaks are
tender. Remove and discard bay leaf, and serve over rice.

Makes 4 servings.

Title: Chimichangas (Chimies)

Yield: 1 Servings

1 lb Cube steak; (shredded beef)
2 Tomatoes; chopped
2 Onions; chopped
1 Cloves of garlic; minced,
-(up to 2)
1 ts Cumin
1 ts Chili powder
1 cn (small) of mild chopped
-green chilies
Flour tortillas - frozen;
-steam to roll
1 c Shortening; in skillet
Shredded cheddar cheese
1 pk Velveeta Jalapeno Cheese
1/2 c Salsa - picante/chili
1/2 Stick melted butter

Fry meat in separate pan. In 1 tsp. cooking oil add chopped tomatoes,
onions, spices, and garlic. Cook 5 minutes on high and 10 minutes on
simmer. Put in bowl with beef and green chilies. Steam tortillas. Put
a big spoonful of filling and a handful of cheddar on each tortilla.
Roll up and seal ends (like an egg roll). Fry in hot Crisco until
golden brown. Drain and serve with cheese sauce.

Cheese Sauce Melt butter and put Velveeta in. When 1/2 melted put
salsa in. When thoroughly melted, spoon over chimichangas.

2 cn Cream of mushroom soup
1 Envelope onion soup mix
1/2 c Water

Place all ingredients in crock pot; simmer on low all day; serve
sauce over rice or mashed potatoes.

While not gourmet fare, this is the type of home cooking that is very
tasty, economical, and easy to do for the person that is very busy &
wants to put a good dinner on the table for the family. Enjoy!

Title: Herbed Minute Steaks
Categories: Meats
Yield: 6 Servings

1 c Salad oil
1/2 c Red wine
3/4 ts Garlic powder
1/2 ts Onion powder
1/2 ts Celery salt
1/2 ts Salt
1/2 ts Oregano
1/2 ts Basil
1/4 ts Black pepper
Dash nutmeg
6 Minute or cube steaks
1/2 c Sour cream
Paprika

Combine all ingredients, except steaks, sour cream and paprika, in
glass or enameled flat pan; mix well. Add steaks and marinate 1
hour, turning severl times. Remove from marinade; pan-fry in hot
skillet, or broil just until browned on each side. Top each steak
with a spoon of sour cream and sprinkle with paprika.
