This is mostly for the original poster:
The last lasagna I made was with canned sauce (Hunt's.) It actually
turned out pretty good. I did add extra basil, fennel, black pepper,
and maybe some oregano, but not to the sauce.
I browned a pound of turkey breakfast sausage with a package of frozen
chopped spinach, chopped onion, and some fennel seeds. Set it aside and
used for the center layer.
The cheese layers were reduced-fat ricotta (not fat free, ick), eggs,
salt, pepper, Romano cheese, and dried basil.
Sauce, noodles, cheese, noodles, meat (little bit of sauce spooned
over), noodles, cheese, noodles, sauce. Bake covered for 45 minutes.
Remove foil, sprinkle mozzarella and/or provolone cheese over the top,
return to oven for about 10 minutes to melt cheese and brown the edges.
I probably mixed a little oregano with the shredded cheese sprinkled
over the top but I don't remember for sure.
