I always start by making fresh salsa. If the meal calls for guacamole
you've *got* to have salsa, too. Chopped tomatoes and onion, pressed
fresh garlic, cilantro, lime juice, minced jalapeno peppers. If you
like it saucy, or if it's winter and the tomatoes are feeble, use lots
of the flavory stuff, just a few "fresh" tomatoes for texture and add a
can of crushed tomatoes in tomato puree for good tomato flavor.

Then I chunk up some ripe avocados, add a scoop (highly technical
measurement) of salsa, a little scoop of sour cream, mash it around and
taste. Add salt and/or lime juice as necessary. Cover with saran wrap
and chill for maybe an hour or so to let the flavors blend. I've seen
one guest rap another on the knuckles with the back of a spoon for
trying to steal the last bite of this off of a plate.
