A salad with chicken i make, often, 2 - 3 times a week. Chicken salad
.... eh!...i never liked much of the so called 'chicken salads'
especially with the raw green onions and celery and such.
Now i have on occasion taken a mayo dressing and added it to some
chicken breast meat ... very nice ... but its just a simple mayo with a
crushed clove of garlic, a big dollop of a good mustard and a bit of
vinegar, or citrus juice, all beat together and added to the diced
chicken meat. Im as likely to serve it on a bed of lettuce in an iced
bowl as i am on a cracker or piece of bread.
