The smoked bell pepper are killer in a meatloaf and not bad used in a
salad either. A little soft & mushy but adds that nice smokey flavour.
(Almost bacon-like).
Might be nice in a corn side-dish, low carbing I'll never know. Kinda
like that mexicana canned corn only wayyy better.
I was thinking they might be nice in a slaw possibly with pulled pork but
the smokeyness of the two together might be too much of a good thing.
This week-end I'm going to smoke some sweet onion slices on a different
rack, when I do some chicken pieces...just a idea. Smoked caramelized
onions...sounds too good to be true, so it will probably suck.
