It's best made with hand cut corn kernals and baby limas. I add butter and
cream, a light sprinkle of thyme, and cook until the cream has thickened a
bit. I've never had it made with actual "creamed corn". It can be made
with frozen corn, but it's not as good.
This is a good recipe...
2 cups fresh lima beans (about 1 pound) (frozen is okay)
4 cups fresh corn cut from cob (about 6 ears)
3 tablespoons butter
1/4 cup whipping cream
1/4 teaspoon dried thyme
1/2 teaspoon salt, or to taste
1/8 teaspoon pepper
Cook lima beans in boiling salted water about 15 minutes or till almost
tender; drain. Add corn, butter, whipping cream, salt, and pepper; mix
well. Cook over low heat, stirring frequently, 7 to 10 minutes, or until
corn is done.
