I bought some 2-inch thick prime rib steaks on sale yesterday. On the
bone. Actual USDA Prime grade beef.
$10/pound

- even being unemployed, I had to get 3 pounds. It
was too good a price to pass up. I also bought some danish blue
cheese for $5.
I grilled them over some Kingsford Mesquite charcoal tonight. Just
did kosher salt and cracked fresh pepper. I cooked them to 122
degrees according to a probe thermometer, and the carry over heat went
up to 140 degrees.
I made my simple steak sauce for it:
- bring 1 cup beef broth to a boil
- add 8 oz heavy cream
- melt in 4-6oz blue cheese
Throw in some seasoned steak fries baked in the oven, a salad with
homemade vinegrette, and a Weltenburger Kloster Asom Bock beer -
heaven. That was better than my last trip to Ruth Chris.
