My changes we
I used half whole wheat flour
I used only one tablespoon of cinnamon. Two sounded like too much to me.
I added about a teaspoon, maybe less of fresh nutmeg
I added about a half a cup of coconut.
I used chopped pecans.
I probably used more than a cup of shredded carrots.
My first batch was a bit on the big side since I originally thought I
would make them into carrot cake whoopie pies. I decided they would be
way too heavy and just a bit of cream cheese frosting would be good. I
took about 4 ounces of cream cheese, a bit of vanilla, a cup or so maybe
a cup and and a half of confectioners sugar and enough milk to make a
thick drizzle. I put the icing into a zipper bag and squeezed out little
zig zags. It was just enough.
They are seriously good.
