Here's a recipe we like:
Indian Spiced Rice
1/4 cup green onion; sliced
2 tablespoon butter
1-1/3 cups long grain white rice
1/2 teaspoon salt
1/2 teaspoon garam masala
1/4 teaspoon cayenne
1 teaspoon garlic; minced
2-2/3 cups chicken broth
In saucepan, saute green onion in butter or margarine until tender but
not brown.
Stir in rice, salt, garam masala, cayenne and garlic.
Cook and stir over medium heat for 1 minute.
Add chicken broth. Bring to a boil, reduce heat, cover and simmer for
15-20 minutes. DO NOT LIFT LID during this period. Remove saucepan
from heat and let stand covered, for 10 minutes. Fluff with fork
before serving.
Yield: 4 servings
Ross.
