My grandmother was making sweet 'tater fries way back when I was less than a
yard tall. I was really disappointed when I found restaurants, and all the
fries were the other kind.

If you want to make 'em yourself, just use sweet 'taters instead of those
Ida-ho ones and cut and cook exactly the same.
