If you don't burn off the alcohol?

Pure alcohol has no flavor. D-uh
Only pure alcohol vapors ignite... they would evaporate anyway,
whether ignited or not. You can't cook off all the alcohol before
making the dish inedible. Igniting the alcohol vapors changes the
dish's flavor not one iota. Evaporating the alcohol through cooking
is what changes the flavor, but by reduction... the same effect will
occur were the flavoring addition alcohol free.
