And I don't know the reason but you can make zucchini bread/muffins with
almost no oil with no change in the result. I usually use about 10% and
use melted butter (which adds a lot to the taste) and the rest with
applesauce. I find the amount of sugar typically called for gives a too
sweet result so I cut it back to 75% of the original amount and the
result is fine.
