When dehydrating you might need the door cracked to keep the temp low
enough, you're dehydrating, not cooking the food. I finished some smoked
jerky in the oven this summer and the only way to get the temp low enough
was to have it turned on the absolute minimum and also have the door open
slightly, without the door open the temps get too high.
