I'll do the petit peas (happily) frozen. I think the larger green peas tend
to have harder skins on them when they're frozen. As for limas, I'll only
use them cooked down in soup with chunks of smoked ham hocks, garlic,
celery, homemade stock, and minced onion. Doesn't matter with the size on
limas because when I make any kind of pea or lentil soup, I cook it down. I
prefer a smoother texture. It's all personal preference, right? :~)
