I think you give the sellers more credit than they deserve.
Everybody's tolerance is different; I cannot eat beef older than a
couple days; it makes me sick as a dog.

I never buy old meat, regardless of the purveyor. OTOH, I don't buy
much red meat anymore, anyway.
