Take a picnic roll ...(a brined pork shoulder roast so it looks ham like
and is in a cheesecloth bag inside the plastic wrapper.)
Put it in a crockpot...make sure it sits on a raft of say several celery
sticks...to keep it up off the bottom of the crock. Chuck out the celery
afterwards it is only there to keep the meat elevated, so the meat won't
cook in it's own juices and taste boiled.
Cook on high say 6 hrs or on low say 10 hrs....Viola! Something not wet.
Take a bone in normal pork Butt roast put it in a crock pot cook it for
say 6 hrs on high or 10 on low. Remove it and shred the meat. And mix
shredded meat with fresh shreded cabbage... again something not wet. The
cabbage should wilt some due to the hot meat shreds.
Both of these recipes use cheap cuts of meat.
