I have recently been using canned black beans for thick, garlicky, cuminy
soup. Instant gratification compared to the hours we have to wait for the
dried ones to get soft. The salt content is high, but the other, positive
nutrition in these things outweighs it. The way I make it, it really is more
like a side dish or main dish, less like soup, because it is so thick. I
love sprinkling the finished mess with cheddar and eating it by the bowl
with corn chips. Mmm mmmm. It's like the cheap and easy fast food of beans.
