Here's the breakin procedure I was going to use...

1. full charcoal load 250*c burn with all ss parts and the damper
threads well coated with peanut oil.
2. several low and slow cooks (pork butts, brisket, ribs...)
3. Once the K has 100 hrs+ burn-in time at low temps and I'm
comfortable that all the moisture has been baked out I'll do a high
temp cook (steak), once again coating all s/s parts with peanut oil.
4. After the first high temp cook I'll coat the tile with a good
quality tile sealer.

Sound good?
