Yes, that is very common too. It adds a nice touch to the enchiladas.
The yolk needs to be on the runnier side, so it oozes into the sauce.
So very, very good!!
Now I am getting hungry for them!! Thankfully, I live in the midst of
some of the best New Mexican food around.
