Years ago I had a cousin who worked in a dairy and he used to with
several quarts of whipping cream at a time. Mom used to whip it up and
then freeze dollops of it on a sheet of foil, freeze and then wrap them.
Later on she would take them out of the freezer and thaw them out. It
worked. I am not sure about doing it with dishes. They would likely get
soggy.
