And if you are cooking over the hot part of the fire (steaks, chops,
etc.) then what? (answer: you're hosed)

Rust is a fact of life on grills. Get used to it or give up
grilling/bbq.

You can do things to minimize it, that's all.
We're still alive talking about it, so it aint so bad.
