Low and slow, over fire (lump charcoal, or wood burnt down to coals) for several
hours. Until the meat pulls back from the ends of the bone, and the meat
slightly cracks when you bend the bones toward each other. Boiling makes pretty
good stock and removes the flavor from the meat. TV cooks are all about saving
time and making things simple, or using sauces for taste. You might as well put
sauce on rice cakes if that's the taste you (not necessarily *you*) are after.
