Up until a few years ago, I never rinsed lettuce. Now I rinse my
cut/turn lettuce for salads as it tastes better for some reason. I
beleive it's because there is some "sap" that comes out of the turn
lettuce that oxidizes immediately. and gives it a flavor.

Romaine lettuce, for example, when cut, often seeps a visible milky
substance at the center of the leaf stalk.
