I'd go with the Chef's Market Menu, mainly because this is the time of year
for short ribs, and they don't appear on the regular menu:

Cream of Parsnip and Granny Smith Apple Soup with In-House Duck Confit
Roasted Shallots, and Apple Julienne

Pan Fried Rappahannock Oysters with Caper-Parsley Butter, Celery Root Puree,
Golden Pineapple, and Celery Leaf Salad

36 Hour Braised Beef Shortribs with Potato Mousseline, Path Valley "Sugar
Snax" Carrots, and Red Wine Braising Jus

Roasted Medallions of Marcho Farms Veal Loin with Parsnip Mousseline,
Caramelized Cauliflower, and Grilled Oyster Mushrooms

Puff Pastry "Cannoli" with Passionfruit Pastry Cream, Moscato-Scented
Pomegranate, and Kiwi
