When I had no choice than to use large cans of coconut milk for making
my version of what the kids used to call "Poison Crew," I could keep
the leftover milk in the fridge in a glass bowl or glass covered with
plastic wrap for up to four days if I thought I'd be using it for more
fish.

If not, I'd freeze it ... but it tended to separate and turn a sort of
grey colour and separate as it defrosted. Then I'd gently mix it with
a fork until it more or less returned to it's original state. Tasted
fine though.

BTW - I always use the "lite" coconut milk rather than coconut cream
because, despite thinking it would be otherwise, the milk tasted
richer to me, as well as the people who shared the "Poison Crew.".
