I'm not sure what you mean by traditionally. Deep dish in restaurants
didn't even show up until 1942 or 43 by Uno's. Lou Malnotti's didn't
show up until the early 70's and quickly became one of the larger
chains but today thin crust accounts for almost half their sales.
There's lots of places to get a good thin crust pizza in Chicago.
