Your statement sounds like you might not agree. Care to elaborate?

Don't forget the real serious leftovers, like pigs feet, fat back,
chit'lins, ham hocks, etc. No part of the pig was wasted.

While I have no doubt the term "soul food" originated in the
African-American community, the concept is World-wide. Anthony Bourdain and
Gordon Ramsey both agree the true mark of a good chef is the ability to take
the least desirable foodstuffs and elevate them to truly delicious food.
