REC - Snickerdoodles (Cream of Tartar)
Here are some Snickerdoodles recipes. I'm not sure exactly what it
does, but cream of tartar is involved in all snickerdoodles. They
just aren't SDs without it.

Snickerdoodles - Betty Crocker

1 1/2 cups sugar
1/2 cup shortening
1/2 cup soft butter -- (1 stick)
2 eggs
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup sugar -- for coating
1 tablespoon ground cinnamon -- for coating
Heat oven to 400º.
Mix 1/4 cup sugar and the cinnamon; set aside. Beat 1 1/2 cups sugar,
the shortening, butter and eggs in large bowl with electric mixer on
medium speed, or mix with spoon. Stir in flour, cream of tartar,
baking soda and salt.
Shape dough into 1 1/4-inch balls. Roll in sugar-cinnamon mixture.
Place about 2 inches apart on ungreased cookie sheet. Bake about 10
minutes or until centers are almost set. Remove from cookie sheet to
wire rack. (9 minutes)

2 3/4 cups all-purpose flour
1 1/2 cups granulated sugar
2 sticks soft butter
2 eggs
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
---Sugar Mixture---
1/4 cup granulated sugar
2 teaspoons ground cinnamon
Heat oven to 400°F. Combine all cookie ingredients in large mixer
bowl. Beat at low speed, scraping bowl often, until well mixed (2 to
4 minutes).
Stir together 3 tablespoons sugar and cinnamon in small bowl. Shape
rounded teaspoonfuls of dough into 1-inch balls; roll in sugar
mixture. Place 2 inches apart onto ungreased cookie sheets. Bake for 8
to 10 minutes or until edges are lightly browned.

Eggnog Snickerdoodles

1 1/2 cups sugar
2 sticks soft butter
2 eggs
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon brandy extract
1/2 teaspoon rum extract
---Sugar Mixture---
1/4 cup sugar or colored sugar
1 teaspoon ground nutmeg
Preheat oven to 400 degrees.
In a large mixer bowl, combine the flour, sugar, butter, eggs, cream
of tartar, baking soda, salt, brandy extract and rum extract. Beat
on low speed, scraping the bowl often, until well mixed.
In a small bowl, stir together the sugar and nutmeg. Shape rounded
teaspoonfuls of dough into 1-inch balls. Roll in the sugar mixture.
Place 2 inches apart on ungreased cookie sheets.
Bake for 8 to 10 minutes, or until the edges are lightly browned.
Remove from the pans to cool.
