Don't worry Cath, I eat (and cook) gumbo. Pretty darn good if you ask me.
I would sub brown rice for white, just to see if you could tell a
difference. I just made jambalaya on Saturday and it disappeared. I'm sure
the color of the rice wouldn't have made a hill of difference.
