I always pan fry my catfish. I always use filets -
I'm not fond of whole fish - too much work to eat.
Anyway, here's what you do.
In a shallow dish large enough to dip the filets put
some buttermilk. I like to add several drops of hot sauce
to the butter milk. Also prepare a shallow dish with
cornmeal to coat the filets. Salt and pepper your filets
on both sides. Dip in the buttermilk to coat both sides.
Dip in the cornmeal to coat both sides. Fry in large skillet
in about 1/2" of oil over medium high heat. Fry to golden
brown on both sides. The fish should be just done by that
time. Serve with coleslaw and hushpuppies (oops, you don't
have a deep fryer so I guess you'll have to make do with
cornbread).
