Start haunting the sales and look for a J.A. Henckels 8-Inch High Carbon
Stainless-Steel Chef's Knife, or any of the other High Carbon German
equivalent. The "high carbon" is very important. Then start adding knives
you think you want as the sales arise. If I had to have only one knife, this
would be my choice. I paid about $35 for this knife at Macy's. Amazon sells
it for $119.
