I've never had a butt go more than 10 hours, and that was a fire/heat
problem.
Don't be afraid to cook it @ 300F. My Costco butts run around 10lbs
and they cook up in 8-10 hours or so.

If you're gonna freeze some of it, why not freeze it cooked? Cooked
butt thaws up real well.
