These relishes are "Midwest staples", Carol, had you not seen them much
before? Such relishes used to be on every farm table, maybe they are
considered somewhat "old-fashioned" and so have fallen outta favor...

Pickled beets and beet relish are another one of these "staples" - type
relishes...
