if you find some nice big morels - rinse them out & pat dry
take your walleye filets, squeeze a lil' fresh lemon juice over them &
season with salt & pepper
put the walleye in a buttered pan, and bake in a 375* oven (or smoker) for
just about 10 minutes...until the fish just turns white & begins to flake
remove from oven and let cool - then flake/break into pieces small enough to
fit in the hole of the morel
once flaked, I like to add a lil' fresh thyme to the fish before stuffing it
in the morels
use a spoon, and fill the morels with the flaked chunks of fish
secure the walleye-stuffed morels with bamboo skewers...alternating with
some pieces of rolled up pepperoni
cook over coals (not too hot) until they are warmed through -
brushing/basting with melted lemon butter
I use 2 bamboo skewers - assuming the "B" is a stuffed morel, it looks
something like this: ==B=B=B=B=B==
